1 sweet potato (or more!)
Olive oil
Salt & Pepper (to taste)
Another way to enjoy the simplicity of a great sweet potato. Basic roasting is easy and very satisfying. Pairs well with avocado and brown rice. Also really delicious to top with this peanut sauce.
Instructions
Step 1
Preheat oven to 450° Rinse potato and pat dry. Cut into 1-inch cubes. Hint: the smaller the cubes, the faster they will cook, but too small will make them burn a little bit around the edges (not always a bad thing though).
Step 2
Drizzle with olive oil and toss with sea salt and pepper.
Step 3
Roast 35-45 minutes, stirring / turning half way. Cook until soft or crispy – however you prefer!
Step 4
Enjoy! Consider making it a meal with brown rice and avocado. A delicious peanut sauce is great on this (link).
